Baked Eggs in Avocado
Ingredients:
2 eggs
1 avocado, halved and pitted
2 slices of cooked bacon, crumbled
2 tsp chopped fresh chives
1 pinch dried parsley
1 pinch of sea salt and pepper to taste
Method:
1. Prepare oven and preheat to 425 F
2. Prepare the eggs and carefully crack it to keep the yolks intact.
3. Arrange the avocado in the baking dish, make sure it won't tip over. Gently add in the eggs. 1 avocado halves to 1 egg yolk. Add in the egg whites too. Season or top it with the chives, parsley, salt and pepper. Bake it until the eggs are cooked. Then top it off with bacon after. yum!
