Clean Eating Pavlova





Ingredients:

4 egg whites
1/3 cup xylitol or you may opt to use stevia
1 tsp cream of tartar
1 tsp apple cider vinegar
White yogurt of choice
Fresh raspberries or choice of fruit
For the berry sauce: 1/2 cup frozen raspberries, 1 tsp maple syrup and a splash of water

Instructions:

1. Prepare oven to 150C/130C and line your pan with parchment paper.
2. Whisk the egg whites till it forms stiff peaks and add in the xylitol a tablespoon at a time.
3. Add in apple cider vinegar and cream of tartar.
4. Scoop in the egg white mixture into the baking pan and create a big circle like a nest. The space in the middle will be the best to add the berries in.
5. Bake for 60 minutes, turn off the oven and let it cool inside the oven.
6. While you are waiting for the pavlova to cool down, add the raspberries in the saucepan together with the maple syrup and water and let it cook for 5 minutes. Make sure the consistency is sauce-like.
7. Remove the pavlova in the oven, add a layer of yogurt on top of it then add the raspberry sauce!
Serve and enjoy.
