White Bean Blondies
INGREDIENTS
- 1½ cups cooked white beans ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup maple syrip
- 2 tsp vanilla
- ½ cup + 2 Tbsp rolled oats
- ¼ cup greek yogurt
- ½ cup vanilla chips or your choice of toppings
INSTRUCTIONS
- Preheat over to 350F. Prepare baking pan with parchment paper.
- Combine all ingredients in a blender or food processor till fully mixed or combine. You may still see traces of oats but the rest of the batter should be smooth.
- Pour in baking pan and bake for 15 to 20 minutes or until golden in color.
- Let it cool and serve.
