Clean Eating Vegan Strawberry Mousse
Ingredients:
1 can organic coconut milk
3 tablespoons freeze dried strawberries
2 tablespoons sweetener of choice
Method:
Prepare the organic coconut milk 2 days ahead by adding it in the refrigerator.
Once it has been refrigerated, the fat part of the coconut milk hardens and separates from the water.
Scoop the hard part. Then add it into a mixer together with the strawberries and sweetener of choice like stevia.
Mix it on high till it turns into a fluffy mousse. Mix till you see stiff peaks forming.
Scoop into favorite container. Serve immediately with your favorite toppings!
