Matcha Pancakes
Ingredients:
3/4 cup gluten-free all-purpose flour
1/4 cup brown rice flour
2 tsp matcha powder
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp sea salt
3 tbsp coconut sugar
1 cup unsweetened coconut milk
2 tbsp melted coconut oil + additional for cooking
Method:
In a bowl, mix flour, matcha, baking powder, bakind soda, salt and sugar.
In a separate bowl, mix wet ingredients - coconut milk, oil and water then whisk till incorporated and frothy.
Mix wet and dry ingredients together.
Let batter rest for a few minutes.
While that is resting you may prep matcha whipped cream by collecting the cream from the coconut milk.Add match powder to it then whisk vigorously until very fluffy. I suggest use a mixer to achieve fluffiness.
Prepare your pan, non-stick and add in 3-4 tbsp of batter of pancake mix and cook 2 minutes on each side till golden brown.
Serve with the cream on top or top with maple syrup and favorite fruits on top like berries.
