Coconut Oil Chocolate Chip Cookies

Ingredients:
1/2 cup quinoa flour
1/2 cup brown rice flour
2 tablespoons arrowroot starch
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1/2 cup coconut oil, softened
1 cup coconut sugar
1 flax egg (1 tablespoon flaxseed meal + 3 tablespoons water)
1 teaspoon vanilla extract
1/2 cup vegan chocolate chips
Method:
Whisk together all dry ingredients.
Set it aside.
In a bowl, beat together softened (a must to soften it) coconut oil and coconut sugar until it's creamy.
Add the flax egg and vanilla until mixture is smooth.
Add the dry ingredients to the wet ingredients. Fold it well. Add in chocolate chips.
Let the dough chill for atleast 2 hours, make sure it is covered.
Preheat oven at 350 degrees F and line it the baking sheet with parchment paper.
Remove the dough from the fridge and scoop dough in 1 inch sizes (or bigger if you like). Place into baking sheets.
Bake for 10-11 minutes or until the edges are crisp and golden.
