BROWNIE BATTER FREEZER FUDGE (RAW & SUGAR-FREE OPTIONS)
This fudge is full of nutrients made from whole foods. Yummy and packed with nutrition. Inspired by yupitsvegan
INGREDIENTS
1 and ¼ c. toasted walnuts or raw walnuts for raw version
½ c. hulled hemp seeds
1 and ½ c. pitted dates, soaked overnight
½ c. + 2 tb. cocoa powder
1 and ½ tsp. vanilla extract
¼ tsp. sea salt
(optional) 2 tb. maple syrup
½ c. nondairy chocolate chips (remove if you want it sugar free)
1 tb. nondairy milk
(optional) 3 tb. cacao nibs or additional chopped walnuts
Method:
Prepare the pan with parchment paper.
Pulse in a processor the walnuts into very fine consistency, make sure to scrape the sides to get it all in.
Add in the hemp seeds and dates till it is smooth. It will be very sticky, make sure the sides are scraped.
Add next the cocoa powder, vanilla extract and salt. Then mix till well combined. Add the maple syrup to adjust the sweetness, omit if you don't like sweet.
Melt the chocolate chips and milk together over a double boiler, stirring constantly to mix together well. Pour into the mixture in the processor, add the cacao nibs and walnuts. Swirl.
Pour the mixture to the pan and flatten it as much as possible as it can be very sticky.
Freeze for at least 30 mins before slicing and serving.
Store leftovers in the freezer in an airtight container.
