Simple Sweet Potato Hash
Ingredients:
Tiny Splash of Olive, Coconut or Avocado Oil
3 Medium Sweet potatoes
6 fresh large eggs
sea salt & pepper to taste
garlic (optional)
fresh parsley for garnish
Method:
Use 3 medium sweet potatoes, diced into even 1 inch cubes.
In a large skillet heat over medium/high heat, add a splask of the olive oil.
Add in the potatoes and toss it around the oil for about 15-20 minutes or until they are cooked and a little crispy. Season it with salt and pepper to taste, add in your garlic.
Carefully break eggs on top of the potatoes.
Lower heat to medium/low.
Cover pan & cook eggs to your desired doneness. It will take about 6 minutes.
Sprinkle with fresh parsley.
