Gluten-Free, Dairy-Free Peppermint Patties
These chocolates are perfect for your paleo or vegan New Year's Eve desserts! This is so easy to make, no baking or cooking required. ;)
Ingredients
1 cup shredded unsweetened coconut
2 tablespoons coconut milk
2 tablespoons coconut oil
1/4 cup honey (or maple syrup)
1/4 teaspoon peppermint extract
1 cup of chocolate chips
Method:
Process the coconut for about 20-30 seconds in a food processor.
Then add in the coconut milk, coconut oil, honey or maple syrup and the peppermint extract.
Process it again for about 20-30 seconds until you can see a paste forming.
Shape it into 1 to 1.5 inch rounds and place it on a baking pan lined with cookie sheets.
Place them in the freezer for a few minutes.
Then in a microwave, melt the chocolates.
Dip the patties in the melted chocolate, coat it well.
Allow it to cool and harden. Serve!
