Pumpkin Protein Cheesecake Mousse
Ingredients:
1 cup low-fat or fat-free cottage cheese
1/2 cup pumpkin puree
1/4 cup milk of choice
1 tbs sugar-free instant butterscotch (or vanilla) dry pudding mix
1/2 tsp pumpkin pie spice
1/2 tsp cinnamon
3-6 packets stevia, or agave nectar or any sweetener you prefer
Optional toppings:
gingersnaps
light whip cream
Procedures:
Add all of the ingredients in a blender and blend till smooth, that easy!
You may serve it immediately OR I prefer to let it sit covered overnight in the refrigerator and top with some light whip cream or crushed gingersnap cookies or nuts too if you desired!
