Clean Eating Greek Yogurt Pumpkin Muffin Bites
Ingredients:
1 cup Greek yogurt
1 cup pumpkin puree
2 cups rolled oats or steel oats if you like
2 eggs
1/4 cup vegetable oil
2 Tbsp. agave nectar
2 tsp. baking power
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. pumpkin spice (fave!!)
1/8 tsp. turmeric
1 tsp. vanilla extract
toppings that you like: almonds, nuts, dark chocolate chips
Instructions:
1. Make sure you preheat the oven at 400 F and prep the muffin tin pans you have.
Set aside.
2. Using blender or processor, blend your oats for 2 minutes.
3. Add remaining ingredients except for your toppings, please!
4. Mix till it's creamy and smooth.
5. Get your prepared pans and fill it halfway. Top with your toppings.
6. Bake for 15-18 minutes.
Remove from the oven and enjoy! Or let it cool first ;)
