Clean Eating Zucchini Fritters
Zoodles becoming a bit boring? Then you should try these Paleo Zucchini Fritters. Simple. Healthy.
Ingredients:
2 medium zucchini, shredded (about 5 cups)
2 tsp sea salt
¼ cup coconut flour
1 egg, beaten
1 tsp black pepper
¼ tsp cayenne pepper, optional
Coconut oil or ghee for cooking
How to:
1. Shred the zucchini.
2. Put the zucchini in a bowl, add in salt and then toss. leave it there for a few minutes. 10 minutes tops.
3. After 10 minutes, squeeze the zucchini to remove moisture.
4. Then add the coconut flour, egg and pepper. Stir.
5. Heat the pan. Low Medium heat.
6. Add in coconut oil in the pan. Then start the frying! The size depends on how you like it. Cool to avoid sogging. :)
