Clean Eating Vanilla-Almond Chia Breakfast Pudding
Did you know that chia seeds are excellent source of antioxidants, omega-3s, fiber and calcium? It was also once the best energy food of the Mayans and Aztecs!! This clean eating recipe will entice you to try and make this over the weekend.
What you need:
2 cups unsweetened almond milk, homemade or store bought (see recipe for homemade almond milk below)
1/2 cup chia seeds
1/2 teaspoon pure vanilla extract
1-2 tablespoons agave nectar
Seasonal fruit for topping (blueberries, peaches, figs and plums are pictured here)
Almonds or other nuts for topping
How to:
1. Add in a bowl the almond milk, chia seeds, vanilla and agave nectar. Mix well till combined till it thickens. If you have those wonderful, cute mason jars that would be a great container!
2. Store in refrigerator, covered overnight or at least an hour.
3. Stir well before consuming and add a bit of water or milk if it is too thick. Top with fresh fruits and nuts that you like.
