Flourless Banana-Quinoa Breakfast Bars
Are you always someone on the go? Like the time isn't just enough? Then this clean eating recipe is definitely for you. This Flourless Banana-Quinoa Breakfast bars can be prepped ahead of time, can be stored for 3-4 days and is the perfect on-the-go meal that's super healthy.
This amazingly healthy breakfast bars are gluten free, NO dairies, eggs, soy, corn and you can also opt to go Nut Free!! (unless you love almonds!)
But I can guarantee you these babies are simply amazing.
What you need:
1 1/2 cups steel-cut oats
1 cup cooked quinoa
1/3 cup coconut sugar
1 tsp. baking powder
1 tsp cinnamon
1/2 tsp nutmeg
2 flax eggs ( 2 tbsp flaxseed meal + 6 tbps. warm water)
1 cup mashed ripe bananas
1 tbsp. vanilla extract
1/4 cup nut butter of choice
What you need to do:
1. Oven should be preheated at 350 F.
2. Line baking sheet, 8x8 in size with parchment paper and greased with cooking spray.
3. Whisk together the oats, quinoa, sugar, baking powder and spices and salt in a large bowl.
4. Then in a separate bowl, mix the banana, vanilla, nut butter together. Add in the flax eggs and pour this with the dry mixture. Mix till full incorporated. It should be moist but not runny or watery.
5. Pour the batter in the baking dish. Make sure it is even.
6. Bake for 15-20 minutes until they are golden brown and firm to the touch.
7. Remove from pan and let it cool. Slice it according to sizes you want and you may store it till 4-5 days.
