Chicken, broccoli & beetroot salad with avocado pesto
If you are looking forward to cooking something with chicken this coming weekend, try this clean eating dinner recipe that is superpacked with superfoods that will definitely make you feel super great this weekend! The ingredients in this recipe will definitely give your body an amazing boost!
Ingredients:
250 grams broccoli (choose the thin-stemmed ones)
2 tsp rapeseed oil (great, light alternative for cooking oil and contains omega 3, 6 and 9!)
3 skinless chicken breast
1 red onion which are thinly sliced
100 grams bag watercress
2 raw beetroots (about 175g), peeled and julienned or grated
1 tsp. nigella seeds
For the avocador Pesto
small pack basil
1 avocado
½ garlic cloves, crushed
25g walnut halves, crumbled
1 tbsp rapeseed oil
juice and zest 1 lemon
Here's how to do it:
1. In a large pan, add water then boil.
2. Add broccoli and cook for 2 minutes. Drain and then refresh in a cold water bath.
3. Head a griddle pan, toss the broccoli in 1/2 tsp of the rapeseed oil for 2-3 minutes turning each side till a bit charred. Set aside to cool.
4. Brush the chicken with the oil and then season. Griddle for 3-4 minutes on each side till cooked to your liking. Leave it to cool down then slide it into chunks.
5. Prep now to make the avocado pesto. Pick the leaves from the basil and set aside some for the salad.
6. Put the basil in a food processor, then school the flesh from the avocado then add to the processor with garlic, walnuts, oil and 1 tbsp lemon juice, 2-3 tbsp cold water and then the seasoning.
7. Process it till smooth and then transfer in a serving dish.
8. The remaining lemon juice pour over the sliced onions and leave it for a few minutes.
9. Place watercress in a platter, add and the broccoli, onion then the lemon juice where they are soaked in.
10. Add the beetroot and then the chicken on top. Scatter the basil leaves on top, lemon zest and nigella seeds.
11. Service this with the avocado pesto at the side.
