Ingredients
0.1 cup, shredded Coconut
1/4 cup, pureed Strawberries
1 fl oz Water
1 serving (serving = 1 packet) Whole Foods Market Stevia
1/2 tsp Vanilla Extract
1/4 tsp Cinnamon
1/4 serving (serving = 3/4 cup) Greek Yogurt 0%
1/2 tsp Baking Powder (Low Sodium)
0.15 serving (serving = 1/4 cup) Now Foods Almond Flour
1/3 serving (serving = 1 scoop) CVS Vanilla Whey Protein Powder
3/4 serving (serving = 2 tbsp) Let's Do Organic Organic Coconut Flour
1 large Egg White
Directions
Mix everything (except strawberries, half the vanilla extract, shredded coconut, and half the stevia) and pour in a greased mug.
Put in microwave and cook for 1-1.5 minutes.
The frosting is greek yogurt mixed with strawberries, vanilla extract and sweetener.
Shredded coconut on top
