Combine oats, flour, cinnamon, baking powder and salt in a medium size bowl. Then in a separate bowl mix the wet ingredients, coconut oil. egg and vanilla then add in the maple syrup. Add in the dry ingredients till it is properly combined. Fold in the diced apples and let it sit and chill in your freezer for a few minutes.<br /> <br /> 2. Preheat your oven to 325 F and prepare baking sheet with parchment paper. Remove the cookie dough from refrigerator then scoop around 1 inch balls and add in the prepared baking sheet, you may flatten it a little bit. Bake for atleast 13-15 minutes.
