Clean Eating Lemon Curd
Ingredients:
1/4 cup unsalted butter (cut into smaller pieces)
1/4 cup maple syrup
4 large egg yolks
2 large eggs
2/3 lemon juice
1 tbsp finely grated lemon zest
Method:
1. In a bowl, beat the butter and maple syrup till light and fluff.
2. Add in the eggs slowly.
3. Add in the juice and add the bowl over a pan of boiling water or use a double boiler for this if easier.
4. Cook over medium heat. Mix consistently till the mixture has thickened like thickness of a pudding. Pour over a jar and store!
You may enjoy it as it is over spread over slice of toasted ezekiel bread! ;)
