Ingredients:
2 and 1/4 cups of rolled oats
1 cup oat flour
1/2 tsp baking soda
1/2 tsp baking powder
1/3 tsp cinnamon
1/3 tsp ground nutmeg
1/4 tsp sea salt
6 tbsp coconut oil
2 tbsp applesauce
1 cup coconut sugar
2 egg whites
1 tsp vanilla extract
1/2 cup raisins or chocolate chips
Method:
1. Pre-heat oven at 350 F or 175 C
2. Prepare cookie sheets, grease with cooking spray
3. In a bowl mix together the dry ingredients and in a separate bowl mix well the wet ingredients. Once the wet ingredients are well incorporated, slowly add in the dry ingredients. Lightly stir in raisins or chocolate chips.
4. Spoon in the dough into your cookies sheets around 2 inches apart. Bake for around 10 minutes or when it is golden brown. Do not overbake or else it will be very hard. Let it rest for 5 minutes then transfer to wire rack to cool. Serve and Enjoy!
