Clean Eating Chocolate Truffles with Espresso
Ingredients:
12 oz. dark chocolate chips (90% cocoa or higher)
7 tbsp of coconut milk
1 tsp of vanilla extract
1 tbsp of ground espresso (don't use instant!)
Toppings of your choice: chopped nuts, coconut flakes or cocoa powder)
Instructions:
- In a bowl that is microwaveable, add in chocolate chips, coconut milk and vanilla.
- Melt the chocolate for 30 seconds, remove from the microwave and stir then do the process again until it's smooth.
- Add espresso to the chocolate mixture and stir until well combined.
- Refrigerate it for up to 3 hours.
- Remove from the refrigerator and form it into balls. Roll the ball in the toppings of your choice - enjoy!! Perfect for New Year's Eve treats!
