Clean Eating Carrot Cake




Ingredients

Olive oil cooking spray
3 large carrots, ends trimmed and peeled
1 1/4 cups whole-wheat pastry flour
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp baking soda
1/4 tsp sea salt
1/4 tsp ground cardamom
2 large eggs
2/3 cup maple sugar
1/4 cup safflower oil
1/4 cup plain yogurt (NOTE: Do not opt for nonfat or Greek.)
1/2 cup plain cream cheese, room temperature
1/4 cup raw honey
1 tsp orange zest

Procedure:

1. Preheat your oven to 325F. Prepare your cake mold, 9 inch and grease it with cooking spray. 
2. Grate your carrots, you may use food processor or a grater. Measure it to 1 and 1/2 cups. Grate it finely. 
3. In a mixer, whisk eggs, you may whisk it by hand or an electric mixer. Add in maple sugar, oil and yogurt. Mix again till frothly. Add in flour slowly till incorporated well then add in the carrots. 
4. Transfer in your cake mold and bake for 30-40 minutes until the edges are golden brown. Test it too using a toothpick till it comes out clean.
5. Once cooked, set aside and let it cool and prepare the frosting.
6. In a mixer, mix cream cheese, honey and orange zest and spread on top of the cake! Enjoy! Happy Easter!
