Gluten Free + Vegan Chocolate Lava Cake
Ingredients:
Dry Ingredients:
1 cup gluten-free All Purpose Flour or Almond Flour
1/2 cup cocoa powder
1 tsp baking powder
1/4 tsp of salt
Wet Ingredients:
3/4 cup strawberry puree
3/4 cup canned coconut milk
1/2 cup vegan sugar
1 tbsp of liquid from a can of chickpeas (aquafaba)
1 tsp vanilla extract
Remaining ingredients:
about 2/3 cup of vegan chocolate chips
coconut oil for brushing
silicone cupcake molds (heart shaped if you prefer)
Toppings:
Vegan Vanilla Ice Cream
Coconut Whipped Cream
Procedure:
1. Preheat the oven to 400 degress and prepare the cupcake molds, grease it a bit with coconut oil.
2. Combine all the dry ingredients and mix it well. Make sure no lumps are on the batter.
3. Add in the wet mixture to the dry mixture and mix well until properly combined.
4. Pour the batter in heart-shaped molds about 3/4 full. Then in each molds add in chocolate chips in the middle then pour batter on top to cover it.
5. Bake for 15-20 minutes
6. Slowly remove the cake from the mold and enjoy it immediately! Recommended to eat immediately while it's hot or warm so the middle is still gooey and lava like! Serve with whipped cream on top. Enjoy!
