Sweet Potato Avocado Bites
Want to sneak a little nutrition to your New Year's Eve Party? This is an awesome recipe to create for New Year's Eve! You can't tell it's that nutritious!
Ingredients:
- 2 medium sweet potatoes, scrubbed and sliced into 1/4-inch thick pieces
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Sea salt, to taste
- 1 1/2 teaspoons olive oil
- 1 large avocado, pitted
- 1/4 cup fresh lime juice
- 1/2 teaspoon sea salt
- 5 cherry tomatoes, sliced into 1/8-inch thick pieces
- 1/2 cup radish sprouts
Method:
Prep your oven at 400 F.
Add sliced potatoes, cumin, paprika, olive oil and sea salt in a bowl and mix them, make sure potatoes are properly coated.
In a baking pan with parchment paper, add in the sweet potatoes and bake for 15 minutes. Make sure they are laid out in a single layer.
While the sweet potatoes are baking, add the avocado in a bowl, add lime juice and sea salt and mash them together.
Once the sweet potatoes are baked, line them in your serving platter, scoop a dollop of avocado on top, add a tomato slice then sprinkle with radish sprouts on top! Enjoy!
