Crockpot Pumpkin Pie Steel Cut Oats
It's crock pot season + pumpkin season!!!
Ingredients:
2 cups steel cut oats
1 3/4 cup of pumpkin
1 400 ml can full fat coconut milk plus enough water to make 7 cups
1 tbsp pure vanilla
1 tbsp + 1 tsp pumpkin pie spice
1/2 cup maple syrup - can add this before or after cooking.
Method:
Place all ingredients in your crockpot. Mix the ingredients well and let it cook for 5-6 hours on low. Serve it hot with a dollop of greek yogurt, maple syrup and some cinnamon on top!
