Clean Eating Banoffee Parfaits
Ingredients:
1 large, ripe banana
1 1/2 cups greek yogurt
1/2 tsp pure vanilla extract
Granola
Date Caramel
Kiwi or fruits preferred
Method:
1. Slice the banana into 1/4 thick and combine with yogurt and vanilla extract.
2. Get a glass container or mason jar, layer the ingredients starting with the granola, banana, date caramel and yogurt and repeat the layer process.
3. To finish it add remaining banana, granola and caramel and fruits
For the Date Caramel, you may make it at home using:
Pitted, chopped dates
1/2 cup milk (you may use almond)
vanilla extract and salt
Blend them together over medium heat and wait till it is thick, smooth and reduced.
For the granola
You may opt for store bought or make your own by combining almonds, old-fashioned oats over medium heat and adding 1 tsp of butter and 1 tsp of honey till granola is coated.
