Clean Eating Lemon Bars
Ingredients:
FOR THE CRUST:
5 tablespoons Tapioca Starch
1 1/2 cups Almond Flour
1/4 teaspoon Salt
2 tablespoons Honey or Agave nectar or any sweetener you prefer
3 1/2 tablespoons Butter, cold, cut into cubes
FOR THE TOPPING:
4 Eggs
3 Egg Yolks
1/2 cup Honey or Agave Nectar
1/2 Cup + 1 tablespoon Fresh Lemon Juice
1/4 teapsoon Salt
4 tablespoon Butter, cut into small cubes
3 tablespoon Coconut Milk - I prefer to use the canned ones
Instructions:
1. Make sure the over is preheated at 350 F.
2. Prep your baking pan. Like it with a parchment paper, make the paper a bit bigger that it goes all the way up the sides of the bakin pan.
3. Use a hand mixer, stand mixer or a food processor whichever you prefer in mixing the batter. Add in the almond flour, tapioca starch and salt. Then add the honey or sweetener you preferred, butter that was cut in cubes and mix it till it becomes the consistency of a smooth dough.
4. Place the dough in the baking pan, press and smooth.
5. Pop the crust in the over for a few minutes, 8-10 minutes will do or when it turns a bit of golden brown.
6. Next comes the filling, in a large saucepan. Add in the eggs, honey/sweetener and then the lemon juice and salt. Mix it till the consistency is smooth.
7. On a medium or high heat add in the butter. Mix constantly until butter melts and the mixture is boiling.
8. Once it is boiling, immediately remove from the heat.
9. Add in coconut milk, then mix and add on the baked crust.
10. Pop in the oven again and bake for 8-10 minutes. You will know it is done when you see the filling becomes shiny or glossy and it sets like a gelatin mixture.
11. Let it cool. Best to pop in the fridge first before serving.
