Baked Parmesan Zucchini Sticks
Here's a recipe that'll get you hooked! Crisp, tender and just perfectly health. Enjoy!
Ingredients:
4 zucchini, quartered lengthwise
1/2 cup grated Parmesan
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
Kosher salt and freshly ground black pepper, to taste
2 tablespoons olive oil
2 tablespoon chopped fresh parsley leaves
How-To:
Make sure you preheat the over to 350 degrees F.
Coat the cooling rack with a nonstick spray. Set this aside
In a small bowl, combine the cheese, thyme, basil, oregano, garlic powder, salt and pepper to taste.
Add the zucchini in the baking sheet and drizzle with olive oil and add the cheese on top of it. Make sure each zucchini has cheese on top.
Bake till tender, only about 15 minutes till it is crisp and golden brown.
