10 Clean Eating Super Bowl Recipes
Super Bowl 50 is here but did you know that The Super Bowl is one of the biggest calories fests of the year for so many? But don't fret! I am sharing with you today 10 healthy, delicious, game-day essentials to munch on!
1. Vegan Enchiladas
You can eat this while watching the game with no worry!! These enchiladas feature a filling of deliciously seasoned rice and black beans! Yum!
Ingredients
- 1 tablespoon coconut oil
- 1/2 cup white onion, diced
- 1 cup uncooked brown rice
- 1 cup of your favorite salsa
- 2 cups low-sodium vegetable broth
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon sea salt
- 1 (15-ounce) can black beans, drained and rinsed
- 1 tomato, cored, seeded, and diced
- 1 (28-ounce) can enchilada sauce
- 16 whole wheat tortillas
- 8 ounces nondairy cheddar-style cheese (we used Daiya)
Bake these goodies at 350 F for 30 minutes :)
2. Buffalo Chicken Dip served with veggies
This is one of the most sought-after Super Bowl recipes! It is combination of shredded rotisserie chicken and cheese with chips and veggies at the side! Heaven! Surely a crowd-pleaser!
Ingredients
- 2 8-ounce packages cream cheese, softened
- 1 cup ranch dressing
- 3/4 cup red hot sauce
- 1-1/2 cups shredded cooked rotisserie chicken
- 1 cup shredded sharp cheddar cheese
- 1/2 teaspoon smoked paprika
- Fritos Scoops corn chips, for serving
- Celery sticks, for serving
3. Lemon-Drop Chicken Wings
These spiked wings have a tangy lemon taste that is baked and not fried and will surely please the guys!
Ingredients
1/2 cup vodka
1/4 cup fresh lemon juice
3 tablespoons sugar
1 tablespoon olive oil
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 1/2 pounds chicken wings, tips trimmed off
Bake for 1 hours and 15 minutes at 400 F until meat are tender and easy to pull off.
4. Seasoned French Fries
This one is so versatile that it's so easy to whip up and will surely make your friends stay and love you more, not just the game!
Ingredients:
Potatoes (sweet or white) peeled and cut - you may cut them the traditional style or in wedges!
Olive oil
1 teaspoon cumin
2 teaspoons chili powder (or more if you like spicy!)
2 teaspoons garlic powder
Bake for 20 to 30 minutes at 350 F.
5. Warm Spinach-Artichoke Dip
With your family and friends engrossed in watching the game, they will not know you are sneaking in a low-cal, highly rich in iron dish!
Ingredients:
1 tablespoon extra-virgin olive oil
1 (16-ounce) can lima (or butter) beans, drained
1 cup light mayonnaise
4 ounces tub-style fat-free cream cheese
1 teaspoon hot pepper sauce (such as Tabasco)
1 teaspoon capers, drained
1/4 teaspoon freshly ground black pepper
1/4 teaspoon dry mustard
1 (14-ounce) can artichoke hearts, drained
1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
3/4 cup preshredded part-skim mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 cup sliced green onions
1 tablespoon fresh lemon juice
Bake at 350° for 25-30 minutes.
6. Hands-off Party Wings
Your family and friends will surely forget the fuss over hot wings when you serve them this dish. ;)
Ingredients
For the wings:
2 tablespoons baking powder
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
5 pounds chicken wings, split and wing tips removed
For the honey-Sriracha sauce:
1/3 cup soy sauce
3 tablespoons Sriracha
3 tablespoons honey
1-1/2 tablespoons minced fresh garlic
1-1/2 tablespoons toasted sesame oil
For cilantro-sour cream dip:
3/4 cup sour cream
3 tablespoons chopped fresh cilantro
3 tablespoons rice vinegar
3 scallions, white and green parts, finely chopped
Bake the chicken wings for 60 to 70 minutes at 375 F.
7. Aged Cheddar Potato Chips with French Onion Dip
Be warned. This dip is highly addictive but uber healthy!
INGREDIENTS:
Olive oil cooking spray
2 yellow onions, finely diced
3 Russet potatoes (about 1 1/2 lb), scrubbed well
Sea salt and fresh ground black pepper, to taste
3 tbsp nutritional yeast
3 tbsp grated Parmesan cheese
2 tsp onion powder, divided
1 tsp garlic powder, divided
1 cup nonfat plain Greek yogurt
2 tbsp fresh lemon juice
2 tbsp chopped chives
Baking time at 20 to 25 minutes at 400 F.
8. BBQ Chicken Pizzas
Everyone craving for the pizza? No need for delivery! These bite sized goodness will satisfy such cravings!
INGREDIENTS:
2 5-oz boneless, skinless chicken breasts
1/4 cup whole-wheat flour
1 lb ball whole-wheat pizza dough, room temperature (TRY: CE‘s Whole-Wheat Pizza Dough)
1/2 cup minced red onion
1 cup shredded part-skim mozzarella cheese
1/4 cup chopped fresh cilantro leaves
Bake 10 to 12 minutes at 450 F.
9. Spicy Oven-Dried Beef Jerky
The guys will love you for this. One of the most quintessential guy snacks and a natural choice for Super Bowl...cleaned and turned HEALTHY!! Yahoo!
INGREDIENTS:
2 lb eye of round beef roast, flank steak or London broil, trimmed of visible fat
2/3 cup low-sodium soy sauce
2/3 cup low-sodium Worcestershire sauce
1 tbsp raw honey
2 tsp fresh ground black pepper
1 tsp onion powder
1 tsp garlic powder
1 tsp red pepper flakes
1 tsp smoked paprika or liquid smoke, optional
Cook for 5 hours at 140 to 170 F.
10. Bacon-wrapped dates
The ultimate Super Bowl appetizer! Dates are stuffed with cheese, wrapped with bacon. Need I say more?
Ingredients
24 whole, plump dates
1 teaspoon cumin seeds, toasted
1/4 pound Parmesan cheese, cut into 24 chunks (about 1/2 inch each)
12 slices bacon, halved crosswise (to make 24 strips)
24 wooden toothpicks, soaked in warm water for 20 minutes
Cook for 15 minutes at 375 F.
