Chai Oatmeal with Coconut & Berries
This is another clean eating recipe that is a booster for your favorite breakfast power meal - oatmeal bowls! Give your favorite porridge bowl a boost using aromatic chai, opt for black tea and not the sweetened ones please. Add in berries and coconuts for added texture that'll play awesomely with your taste buds ;)
Here's what you need:
2 chai tea bags, black or herbal ones
1 1/2 cups steel-cut oats
2 bananas, cut into cubes
1/2 tsp sea salt
1/2 cup coconut milk
2 tbsp unsweetened shredded coconut
1/4 cup berries of your choice
What you need to do:
1. In a saucepan, bring the water to boil then add the tea bags cover and turn off the heat. Let it steep for 10 minutes then discard the tea bags.
2. Add in your oats, bananas and salt.
3. Let it boil again and reduce the heat to medium-low. Stir in the coconut milk and let it simmer for 15 minutes until the oats are tender and to your liking. You must stir in occasionally.
4. On a separate pan over medium-high heat, add shredded coconuts and swirl it for a few seconds till it is golden brown then set it aside. Careful as it can burn that fast!
5. Place the cooked oatmeal in a bowl then top with the remaining banana slices, berries and your toasted coconuts!
