Healthy Chicken Fried Rice


Healthy chicken fried rice does exist! This is a healthy way to curb those Chinese food cravings, and it’s a great meal for the whole family. Plus, it’s easy to make! Just follow the directions below and you’ll have an amazing dish ready to serve.


Healthy Chicken Fried Rice


Ingredients:


12 oz boneless, skinless chicken breasts
3.5 cups cooked brown rice
1 cup onion, chopped
1 cups frozen peas and carrots
½ cup chopped celery
½ cup bean sprouts
3 eggs
1 tablespoon minced garlic
1 cup green onion, chopped
3 tablespoon coconut oil
2 tablespoon soy sauce


Directions:


Start the healthy chicken fried rice by cooking the chicken breasts. You can add a little soy sauce and some spices of your choice to the chicken while you’re cooking it to add a pop of flavor. When the chicken has cooled, shred it into small pieces.


In a wok, cook the vegetables and garlic in 1 Tablespoon of coconut oil and 1 Tablespoon of soy sauce until soft. Add the eggs and stir until they are cooked through. Add the rest of the coconut oil and allow it to heat up before adding the cooked rice and chicken. Stir in the soy sauce and take off the heat. Serve immediately to your grateful family who will be impressed by the healthy chicken fried rice.


Make a bunch of this healthy chicken fried rice as the main course, or make a smaller portion as a side dish. I like to have healthy chicken fried rice with an extra piece of grilled chicken and a side of guacamole. It’s also the perfect side dish to a giant Asian salad. Well, great, now I’m hungry. LOL!
