Peanut Butter Protein Pudding
I love my sweets like the rest of them but, they do not coinside in my vision of having a toned, lean physique! I have to be creative to satisfy my cravings yet still meet my macronutritional requirements for the day. These days it is all about the PROTEIN!! I love this recipe from Muscle fitness and HERS magazine! This stuff is so delicious I could lick the bowl clean!
Makes 2 servings
Ingredients:
2 tbs natural peanut butter, creamy
1/2 cup nonfat Greek Yogurt
1/4 cup protein powder, vanilla flavor
2 Stevia packets, or to taste
1/2 tsp pure vanilla extract
2 tbsp unsweetened applesauce
2 tbsp low calorie almond milk
Optional: 1 tbsp crushed peanuts
Directions:
Place peanut butter in a small, microwavable dish. Heat on high for 20 seconds, or until peanut butter softens. Add Greek yogurt and stir. Continue to add all remaining ingredients and whisk by hand until well combined. Top with a few crushed peanuts.
Nutrition Facts (per serving): 248 calories, 29g protein, 11g carbs, 10g fat
